New Products & Energy Bites!


March was crazy busy and stressful for us. But it all paid off, we are so proud to announce we now have new berry powders available in our shop! We now offer a full line of berry powders; Blueberry, Blackberry, Black Raspberry, Red Raspberry, & Aronia Berry!

During the month of April when you purchase any of our powders (4oz or more) you will receive a 2oz sample of another flavor. No coupon needed, this is just something we are doing so our customers can try more of our new products!

We've gotten one common question about our powders which is "How do you use it?" So we thought we would share some of the ways we use our powders. If you receive our newsletter then you saw this months featured recipe of 'No Bake Blueberry Energy Bites' well that was just a jumping point for us. We dived in head first into Energy bites, and the results are really delicious!



Our Base Recipe:
  • 1 TBSP Coconut Oil
  • 1/3 C Almond Butter (or nut butter of your choice)
  • 1/4 C Honey (or maple syrup)
  • 1/2 C Old Fashioned Oats
  • 2 TBSP Chia Seeds

The Add Ins We Love:

Instructions:
1. Prepare baking sheet with lined parchment, set aside.
2. Melt coconut oil in a large bowl.
3. Stir in the nut butter, honey (or maple syrup) until smooth. Add the oats, chia seeds, and mix ins.
4. Roll into 1 tablespoon balls and place on prepared baking sheet, and place in freezer for up to an hour.
5. Remove from freezer and transfer balls into plastic bag.
6. Store in the fridge for up to one week or the freezer for up to 3 months.

Aronia Berry Coconut Crunch Nutrient Dense Energy Bites: 2 tsp aronia berry powder, 1/4 cup roughly chopped unsalted almonds, 1/4 cup coconut flakes.

Black Raspberry Coconut Nutrient Dense Energy Bites: base recipe + 2 tsp black raspberry powder, 1/4 cup coconut flakes.

Blueberry Crunch Nutrient Dense Energy Bites: base recipe + 2 tsp Blueberry powder, 1/4 cup roughly chopped unsalted almonds. (You can also add in 1/4 cup dried blueberries for even more flavor!)

Raspberry Coconut Nutrient Dense Energy Bites: base recipe + 2 tsp raspberry powder, 1/4 cup coconut flakes.

Fun fact about working with the powders, they don't come off on your hands when forming the balls, so you don't have to worry about your hands getting covered in it! :)

Newsletter for November 2015

Happy November! 

Happy November everyone! Wow fall is moving so fast this year! In Oregon where we are, we actually just started to have rain and to feel like it is truly an Oregon Fall. Our blueberries bushes are mostly red now, there is still a bit of green on some of the plants. Did you know different varieties of blueberries turn colors at different times? For us our Duke Blueberry plants turn first, and our Jersey Blueberry plants are the last to fully be red. They also vary in tone of red, Blue Crop Blueberries like to be more of this deep red, and Jersey Blueberries are more orange red.

News From Around the Farm

We have finished putting our blueberry plantings to bed for the fall and winter, and have been working really hard in the raspberries and blackberries tying up the canes and getting the plants ready for next year.
So I know we have been talking about our freeze dried powder, and our freeze drier. Well I sort of have good news. (Just bear with me here guys…) We still have a broken freeze drier, and we are still at that 90% mark. The good news is we have found a company that we can work with to make some blueberry powder for us. We will only have blueberry powder for a while. So it’s better than nothing.  When we have blueberry freeze dried powder available we will be posting on our blog, Facebook, and Twitter. As well as of course having it available in our online store. 

Cold Weather Shipping is Back!

We know a lot of you guys have been waiting for our cold weather shipping to come back. For those of you who are new to our site, every winter we are able to offer better shipping prices on our frozen berries. We are able to do this by shipping by ground rather than by 2-day air, which is standard in our store online. To take advantage of our ground shipping this winter, give us a call at 541-752-0460 (10 am to 4 pm, PST). 

Winter + Holiday Office Hours

Our office hours right now are Monday to Friday 10 am to 4 pm PST.
Our office will be closed for Thanksgiving: November 26, 2015 and November 27, 2015.
Our office will also be closed from December 21, 2015 to January 4, 2016. 

Website Changes on The Horizon

We are going to be making changes to our website, so if you see something wonky, or weird. Please have patience as we will be improving and changing it over the next few months. Our goal is that in 2016 we will have a brand new site, that is educational, and user friendly.

We don’t have any coupons this month but there are a couple of different ways for you to save.
1.     We still have an ad in the Pet Press magazine, to use it just bring it in when you visit us at our farm. (There is no code, not valid for online & phone purchases)

Healthy Thanksgiving: Carrot-Mushroom Stuffing, Diabetic Friendly!

It can be hard during the holidays to cook for everyone, especially those with diatry restrictions, however keeping healthy during the holidays is important, and if you can make it through the holidays healthy then that is an achievement within itself!

Carrot-Mushroom Stuffing
Ingredients:

  • 2 TBSP olive oil
  • 6 Cups freshly sliced shilltake & button mushrooms
  • 1/4 Cup sliced green onions
  • 1 TBSP reduced-sodium soy sauce
  • 2 TSP snipped fresh oregano, crushed
  • 1 1/2 rosemary or 1/2 teaspoon dried rosemary, crushed
  • 1/4 TSP pepper
  • 6 Cups dry whole grain bread cubes*
  • 3 Cups coarsely shredded carrots (6 medium)
  • 1 cups reduced-sodium chicken broth




Directions:
  1.  Preheat oven to 325 degrees F. In a large skillet, heat oil over medium heat. Add mushrooms. Cook for 5 to 8 minutes or just until tender, stirring occasionally. Add green onions for the last 1 minute of cooking. Remove from heat. Stir in soy sauce, oregano, rosemary, and pepper.
  2.  In a very large bowl, combine mushroom mixture, bread cubes, and carrots. Drizzle with enough of the broth to moisten.
  3.  Place stuffing in an ungreased 2- to 2 1/2-quart au gratin or baking dish. Bake, covered, for 45 to 55 minutes or until heated through. (Or to use to stuff a 10- to 12-pound turkey, prepare as above, except use 3/4 to 1 cup broth instead of 1 to 1 1/4 cups broth. Spoon lightly into turkey neck and body cavities; do not pack. Internal temperature of stuffing should register 165 degrees F on an instant-read thermometer.) Makes 12 (3/4-cup) servings.
Additional Notes:
  • Make-ahead directions: Prepare as directed through step 2. Place in a 2- to 2 1/2-quart au gratin or baking dish. Cover and chill up to 24 hours. Preheat oven to 325 degrees F. Bake casserole, covered, for 60 to 70 minutes or until heated through. (For safety reasons, do not make stuffing ahead if planning to use for stuffing a turkey.)

  • *To dry whole grain bread: Cut enough slices of whole grain bread into 1/2-inch cubes to equal 8 cups (10 to 12 slices). Spread out in a shallow baking pan. Bake, uncovered, in 300 degrees oven about 15 minutes or until dry and crisp, stirring twice. Cool. You should have about 6 cups dried bread cubes.

Autumn is for Apples; Baked Apples - A Healthy Treat -


Autumn is for Apples 

I love walking down to our orchard and picking all the apples from our trees. For those who don't know we have what we like to call an orchard. It's not really. It's seven apple trees, a pear tree, an a couple of plum trees. But it's tucked away next to one of our younger fields of blueberries, on the lower side of our farm. We also used this space as a make shift nursery when we had extra plants from last year and the year before when we were replanting our fields. 

One of my favorite things is to have baked apples in the fall, and this is one of my favorite recipes. 

Baked Apples 
Prep Time: 20 Minutes           Total Time: 1 Hour 20 Minutes         Servings: 4
Ingredients:
4 medium sized, crisp apples (such as Gala or Honey Crisp)
1/3 cup brown sugar
1/4 cup graham cracker crumbs
2 tbsp butter, softened
1 tsp ground cinnamon
1/2 tsp freshly grated lemon zest
1/4 tsp ground nutmeg
1/2 cup apple juice
3 tbsp honey
1 tbsp freshly squeezed lemon juice (from 1/2 lemon)

Directions:
1. Preheat oven to 350 degrees F. 
2. Hallow out the centers of the apples, I use a paring knife but a melon baller also works. You'll want to remove the stem and core leaving a good sized hole, around 3/4" wide. Around the top of the apple you'll also want to remove all that skin of the apple. You can do this with a veggie peeler or paring knife. 
3. Next combine the sugar, butter, ground cinnamon, lemon zest, nutmeg, and graham cracker crumbs in a medium sized bowl. I like using a rubber spatula, but a fork works just as well. 
4. With mixed filling, pack into apple holes until  level with the opening. Place the apples into an 8X8" dish.
5. Combine lemon juice, apple juice, and honey into a microwaveable cup. Microwave on high for 30 seconds. Stir to blend and pour around the apples in dish. 
6. Cover apples with tin foil and bake for 45 minutes. 
7. After 45 minutes, uncover the pan and baste the apples with the juice from the pan. Continue baking apples for 10-20 minutes more, or until apples are very tender. Serve warm or cold with pan juices. 

Nutritional Info (per serving): 300 calories, 1 g protein, 65 g carb, 5 g fiber, 6.5 g fat, 4 g sat fat, 41 mg sodium.

It's Finally Summer! Fresh Berries + News from Sunset Valley Organics


Happy Start of Summer!


We are so happy it’s finally SUMMER! Anybody else feeling the heat we have gotten over the last few days? All this heat really helps our berries ripen, and it helps make them sweeter! Yum! As we have announced we do not have fresh strawberries (frozen is still available) this year. However we will have raspberries, blueberries, and blackberries. 

News From Around The Farm

We have finished trellising the black raspberries, and what a boat load of work that was! After we got it all trellised we put in drip irrigation to the field so we could easily make sure everything was getting the water it needed and that took a good part of our May. 
Every week now we are feeding our plants and soils so they stay nice and healthy during the harvest. Just as we work hard and need food to continue so do our plants. 
In May we also got to try Bearded Brother’s Blueberry Vanilla Energy Bars they were so good you guys! The reason we wanted to try them is because these specific bars are made with our dried blueberries. 
We have also been voted the best U-Pick Berry Farm of 2015 by the readers of Willamette Living Magazine. We would like to thank everyone who voted, and even if you didn’t, you are the whole reason we do this, with out you guys we wouldn’t be in business. So THANK YOU! 

Social Media Updates

This month on our blog we are posting about National Men’s Health Month, and some delicious recipes to go along with it. We will also have a Father’s Day inspiration gift guide. This is also going to be a great place to check for updates about our harvest this summer. 
We are also going to be starting an Instagram account so if you wanna see some awesome shots of our farm and what harvest looks like for us then be sure to watch Facebook for that announcement!

This month we are trying to beat the heat with some delicious, healthy smoothies. We hope you enjoy the selections we have chosen. 

Raspberry Coconut Smoothie

Dairy-Free, Vegan Friendly
Prep time: 5 mins
Cook time: 0 mins
Ready in: 5 mins
Yield: 1 smoothie
Ingredients:
1/2 cup coconut milk 
1 cup frozen or fresh raspberries
1 tablespoon coconut butter
1 banana peeled, chopped into pieces
optional: sweetener of choice, if needed. 
Directions:
Blend all of the ingredients into blender, food processor, or with an immersion blender.
Optional: Add sweetener to taste.
If the smoothie is too thick for you, add milk until it’s your desired consistency.

Raspberry Mango Tango Smoothie

Prep time: 5 mins
Cook time: 0 mins
Ready in: 5 mins
Yield: 1 large smoothie, or 2 small smoothies
Ingredients: 
1/2 of a large banana, peeled, sliced and frozen. 
1/2 cup favorite brand of Mango yogurt
1 cup fresh or frozen mango
1 cup fresh or frozen raspberries
optional: milk for desired thickness.
Directions:
Add all of the ingredients into the blender
Blend on high for about 3 minutes, or until smooth.
Serve + enjoy!

March 2015 Updates from Around the Farm


Spring is upon us!

We have been busy feeding our berries and getting them ready for spring. We are so excited to see those blossoms go into full bloom. The farm is so pretty then. Bob gave another soil talk here in Corvallis. Our hope is to soon make those talks available to you guys in one way or another. So something to look forward to! To see updates be sure to follow us on all our social media!
We have started applying foliar feedings to the Berry plants. A foliar feeding is used to supply the plant with minerals through the leaves and branches. We have found out that the leaves have microbes, just like the soil, that will digest these minerals making them more available to the plant. During different times of the year we help the plants grow or reproduce by the types of foliar minerals we have provided them. By understanding which minerals enhance growth or reproduction and the proper timing of each we can bring the plant closer to it's genetic potential (yield, nutrient density, sweetness and flavor). Every year we are learning more and more about how to use this very powerful tool.

Leap into Spring!

Blueberry Power Muffins using Fresh/Dried Blueberries from Finger Prickin' Good

Ingredients:
  • 2 cups all-purpose flour
  • 1 cup oats–quick or regular oats
  •  2/3 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups honey nonfat Greek yogurt (I like Chobani)
  • 2 large eggs, lightly beaten
  • 4 Tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (or try our dried blueberries)
Directions:
  1. Heat oven to 350°.
  2. Coat muffin tin with cooking spray or liners.
  3. Combine flour, sugar, oats, baking powder, baking soda and salt in a bowl.
  4. Combine yogurt, eggs, butter, and vanilla in a second bowl.
  5. Fold yogurt mixture into dry mixture; stir to combine completely.
  6. Gently fold in blueberries.
  7. Spoon into muffin tins (don't be afraid to fill them full).
  8. Bake until top is golden and springs back when you gently touch it, 20-25 minutes.

Strawberry Cream Cheese Pastries Inspired byDitehood



For the Pastries:
  • 1 package (8-ounces) cream cheese, softened
  • 2 sticks (16 tablespoons or 226 grams) butter, softened
  • 2 cups all-purpose flour
  • powdered sugar for dusting
  • ½ teaspoon salt
  • For the Filling:
  • 1 package (8-ounces) cream cheese, softened
  • ½ cup powdered sugar, or to taste (if you prefer it sweeter, add more)
  • 1 teaspoon pure vanilla extract
  • SVO strawberry jam
Directions:
  1. In your mixer's bowl, beat cream cheese and butter until smooth, light and fluffy.
  2. Add flour and salt and continue to mix until thoroughly combined.
  3. Lightly dust work area with powdered sugar.
  4. Transfer dough to work area and shape into a ball.
  5. Divide it into 4 rounds; flatten each round and cover each pastry dough with plastic wrap.
  6. Refrigerate for 30 minutes.
  7. In the meantime, prepare the filling by combining cream cheese, powdered sugar and vanilla in your mixer's bowl.
  8. Beat until creamy and smooth. Set aside.
  9. Dust work area with flour.
  10. Remove dough from fridge and let rest for 5 minutes.
  11. Roll out each ball of dough to a ¼-inch thickness.
  12. Cut into 3x3 squares.
  13. Fill the center of each square with ½-teaspoon cream cheese mixture and ½ teaspoon strawberry jam. For a prettier presentation, using a pastry bag, you can pipe the fillings, one on top of the other.
  14. Overlap opposite corners of dough to the center and over the filling. Pinch seams together.
  15. Refrigerate for 1 hour.
  16. Preheat oven to 375.
  17. Bake 10 to 11 minutes, or until edges are browned.
  18. Cool completely.
  19. Serve.

Recipes of the Month

Cupid's Strawberry Float for Valentines Day inspired by Frugal Coupon Living

Ingredients:

  • Vanilla Ice Cream
  • Strawberry Soda
  • Whipped Cream
  • Maraschino Cherries (optional)
Directions:


  1. Place 2 scoops of vanilla ice cream in a glass.
  2. Slowly add strawberry soda  – it will foam a lot!
  3. Optionally you can add whipped cream and a cherry to the top.
  4. Serve with long spoon and straw.










Fruit Salad Cutouts inspired by Shari's Berries

"We all know that fruit should be cut into bite-sized pieces. But who wants to spend all day slicing apples? Grab the right tools for the job and make quick work of the task: an apple corer, a strawberry huller and a melon baller. Small cookie cutters work great for melons and also add a decorative element to the salad.
Ideally, all your fruit will be perfectly ripe. After all, no one wants a mouthful of mushy melon and tart strawberries. If you do end up with a basket of less-than-ripe fruit you can fix it with sugar. Sugar breaks down unripe fruit making it softer and sweeter. Take this hack to another level by using mint- or vanilla-infused sugar.
Keep it fresher in a salad spinner. Fruit salad gets juicier the longer it sits. The basket of a salad spinner will let the extra liquid drain and help the fruit stay crisp when stored overnight. February 2015 Updates


We have had quite a busy month here on the farm!

While we are still busy finishing up pruning our berries and are ready for the spring, we will start feeding our plants. Bob gave a talk to students at OSU this past month. We hope to make this available on our site very soon for those of you interested. We will be posting updates to our Facebook page with any new information about developments in that regard. 
Last month you might have noticed we tried something new for our newsletter layout and had a great response. Which is great! Thank you to all new subscribers and an even bigger thank you to all of our old subscribers! Keep an eye out for more simple changes we have coming to Facebook, Pinterest, and Twitter in this coming year. It’s going to be a great 2015!

Strawberry Cream Cake from Pretty, Simple. Sweet.


Ingredients
Cake:
  • 1 1/4 cups (170g/6oz) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup (1/2 stick/56g) butter
  • 1/2 cup (120ml) whole milk
  • 3 large eggs, at room temperature
  • 1 cup (200g/7 oz) granulated sugar
  • 1 teaspoon pure vanilla extract
Whipped Cream:
  • 1 1/2 cups (360ml) heavy cream
  • 1/2 cup cream cheese or mascarpone cheese
  • 1/4 cup granulated or powdered sugar
  • 1 teaspoon pure vanilla extract
  • About 1 pound/450g fresh strawberries, cut into halves or quarters
Instructions
Preheat oven to 350F/180C. Grease 2 8-inch pans (read note if you have only one pan) and line the bottoms with parchment paper for easy release later on.
In a medium bowl, sift together flour, baking powder, and salt. Set aside.
In a small saucepan, combine butter and milk over medium heat just until butter is melted. Do not let it boil.
In a mixer bowl fitted with the whisk attachment, whisk eggs on high speed until combined and starting to foam, about 1 minute. Gradually add sugar and keep whisking until tripled in volume, about 6 minutes. Beat in vanilla.
Reduce speed to medium-low and add warm milk mixture into the egg mixture in a slow, steady stream. Add flour mixture in 3 additions and fold by hand using a rubber spatula just until combined.
Pour batter into prepared cake pans and smooth the top. Bake for 20-25 minutes, until the cake springs back when slightly touched and a skewer inserted into the center comes out clean. Allow cakes to cool on a wire rack for 15 minutes, then run a knife around the edges and invert the pan onto the rack. Let cool completely.
Without filling, cakes can be wrapped airtight and refrigerated for up to 5 days or frozen for 2 months.
For the whipped cream: In a mixer bowl fitted with the whisk attachment, whisk heavy cream with sugar and vanilla until stiff peaks form. Avoid overbeating.
Assembling the cake: Set one cake layer on a plate. Arrange about half of the strawberries in a single layer on top. Evenly spread 1/3 – 1/2 of the whipped cream over the strawberries, leaving a small border around the edge. Top with the second cake layer, this time spreading the whipped cream first and layering the strawberries on top.
Cake can be kept in the refrigerator for up to 1 day.
*If you have only one cake pan, scrape all batter into it. It will need more baking time. Once completely cooled, cut in half. If you refrigerate it first, the cake will be firmer and easier to cut.
*You can also make a 2-layer 6-inch cake with the same amount of cake batter. Bake in 2 6-inch pans for 30-35 minutes. You’ll need less whipped cream and strawberries.

Raspberry Lemonade Slice from Lick The Spoon

Ingredients
Crust:
  • 9 tbsp butter
  • 1/4 cup sugar
  • 1 cup flour 
  • 1 tsp vanilla essence
  • pinch of salt
Filling: 
  • 2 1/2 cups frozen raspberries, thawed
  • 1 cup sugar
  • 2/3 cup lemon juice (about 3-4 medium lemons)
  • zest of 3 lemons
  • 3 egg whites
  • 1 egg
  • 2/3 cup flour
  • pinch of salt, extra
Directions
Preheat the oven to 180C. Line and grease a 8x8 inch square baking dish.
To make the crust, cream together butter and sugar until light. Add the flour, vanilla and salt and mix until combined well. Do not over mix as this can make the base tough. Press the dough evenly into the bottom of the prepared baking dish. Bake for 20-25 minutes or until just golden brown. Remove from oven and cool.
To make the filling, place all thawed raspberries in a fine sieve and press them into a large bowl with the back of a spoon. Discard the caught seeds and skin. Add the sugar, juice, zest, whites, egg, flour and salt and combine, until well incorporated.
Pour the raspberry mixture onto the base and place in the oven. Bake for 30-35 minutes. Cool on the bench before placing in the refrigerator to set completely (about 3-4 hours) Cut and decorate as desired.
NOTES: This slice freezes well and makes a great dessert or afternoon tea to have handy for unexpected guests or dinner parties.

Healthy Thanksgiving Alternatives

Every thanks giving we all basically throw out whatever good eating habits we have been trying to stick with because of all of the delicious food that happens around the holidays, especially thanksgiving. This year we would like to offer some healthy alternatives so you can still enjoy all those delicious dishes and not feel bad about it! Best of both worlds! We hope you enjoy!

Gluten Free Stuffing inspired from Yammie's Gluten Freedom
For the Bread:
1 cup warm water 
1 1/2 tablespoons instant dry yeast
3 eggs
1/4 cup brown sugar
1 cup Tapioca Flour 
1/2 cup Potato Starch 
1 cup White Rice Flour 
2 teaspoon Xanthan Gum 
1 teaspoon baking powder
1 teaspoon salt

Combine the water and yeast. Let it sit for a couple minutes. Add the eggs, brown sugar, tapioca flour, potato starch, 1/2 cup of the white rice flour, the xanthan gum, baking powder, and salt. Stir until smooth. Add the remaining 1/2 cup of rice flour and stir to combine (I just add it later so it's not as hard to stir).
Plop it on a greased baking sheet and allow to rise for about 30 minutes. Bake at 350ºF for about 45 minutes. 

For the Stuffing:
6 cup dry bread cubes (cook at 200ºF until dry or chop into cubes and set out for a day or two until dry)
A few tablespoons olive oil or butter
2 teaspoons minced garlic 
1 cup chopped yellow onion
1 cup chopped celery 
 2 teaspoons Italian seasoning (or any combination of sage, thyme, oregano, basil, and rosemary)
3 cups chicken stock
1 egg, slightly beaten

Saute the garlic, onion, and celery. Add the bread and seasoning. Add the chicken stock and egg and mix just until combined (don't over mix). Dump into a greased baking dish. Bake for about 30 minutes at 350ºF or until the top is toasty.

Southwest Style Baked Sweet Potatoes (paleo friendly!) 
inspired from savory lotus








Serves 4
Ingredients:
  • 4 large garnet or jewel sweet potatoes
  • 1 TBS butter, ghee, or coconut oil
  • 1/4  onion, chopped fine
  • 1/2 LB ground beef, bison, or turkey (preferably grass fed/pastured)
  • 1/2 tsp  celtic sea salt (like this)
  • 1 tsp cumin powder
  • 1 tsp chili powder (I use this one)
  • 2 TBS filtered water
  • 2 cups baby spinach, chopped
  • FOR SPICY AVOCADO SAUCE:
  • 1 ripe avocado, mashed
  • 1 TBS olive oikl
  • juice from 1 lime or lemon
  • a pinch of celtic sea salt
  • a few dashes of your favorite hot sauce (my favorite)
  • FOR GARNISH:
  • green onions
  • cilantro
  • 1 tomato, chopped
Directions:
  1. Preheat oven to 400° F.
  2. Pierce each sweet potato several times with the tines of a fork. Place the sweet potatoes on a rimmed baking sheet. Bake until tender and completely soft, about 45-60 minutes.
  3. Prepare avocado sauce by combining all avocado sauce ingredients and mixing until creamy and smooth. Set aside.
  4. About 30 minutes into baking the sweet potatoes, melt fat of choice in skillet and saute onion for 7-9 minutes until beginning to brown.  Add ground meat and continue to cook until meat is completely browned.
  5. Add salt, cumin, chili powder and water to skillet.  Mix to combine and cook another 5 minutes on low-medium, until water is all cooked off, stirring occasionally.
  6. Add chopped spinach and cook another couple of minutes until spinach is wilted. Cover and remove from heat.
  7. When sweet potatoes are done, make a slit in the top of each sweet potato and squeeze the ends to create a little well inside. Gently loosen up some of the inside of each sweet potato with a fork.  Then top with big mound of spiced ground meat.  Drizzle with spicy avocado, and garnish with green onions, cilantro, and tomato.
  8. Serve with fresh green salad or steamed greens.  Enjoy!
