Men's Health Awareness: Healthy Oatmeal Pancakes

Healthy Oatmeal Pancakes
Serves: about 12
 
Ingredients
  • 2 cups quick oats (see Note for substitution)
  • ½ teaspoon baking soda
  • 2½ cups buttermilk (see Note for substitution)
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • ⅓ cup vegetable or canola oil
  • 2 eggs, beaten
Instructions
  1. Combine oats, baking soda, and buttermilk. Let mixture stand for 5 minutes.
  2. In another bowl combine flour, baking powder, salt, and sugar.
  3. Add the oil and eggs to the oat mixture and stir to combine.
  4. Add the dry ingredients to the oat mixture and stir until blended.
  5. Cook on lightly greased griddle or skillet.
  6. Top with syrup, yogurt, fruit, applesauce, peanut butter, or jam.
Notes
Quick Oats Substitute: If you only have old-fashioned oats pulse them in the blender briefly to chop them up slightly and then you have quick oats!

Buttermilk Substitute: Substitute buttermilk with 2¼ cups milk and 2 tablespoons white vinegar or lemon juice. Let mixture sit for 5 minutes or until it appears to curdle.

Health Benefits of Strawberries


Need more reasons to love strawberries? Well here is ten, we are so excited for summer and strawberry season! Those sweet juicy berries will be here before you know it.

1. Strawberries boost immunity. These little guys are a great source for vitamin C. Most mammals with the exception of humans have the ability to produce vitamin C naturally, which is why we need to make sure we get the proper amount everyday. And strawberries are so delicious, why would you say no? In one serving of fresh strawberries (which is half a cup) you get about 52mg which is about half of the daily requirement, so all you have to do is double up to a whole cup and you get all the vitamin C you need everyday. Yum! 

2. Strawberries promote eye health. The antioxidants in strawberries might also prevent cataracts,
which can lead to blindness in old age. But not for us! Our eyes require vitamin C to protect them from exposure to free-radicals from the sun's UV rays, which can damage the protein in the lens. Vitamin C also plays an important role in strengthening  the eye's cornea and retina. While high doses of vitamin C have been found to increase the risk of cataracts in women over 65, researchers from the Karolinska Institute in Stockholm note that the risk pertains to vitamin C obtained from supplements, not the vitamins from fruits and vegetables.


3. Strawberries help fight cancer. Vitamin C is one of the antioxidants that can help with cancer prevention since a healthy immune system is the body's best defense. A phytochemical called elegiac- acid also found in strawberries-is another. Elegiac acid has been shown to have an anti-cancer properties like suppressing cancer cell growth. Strawberries also have the antioxidants lutein and zeathancins. Antioxidants are scavengers to free-radical and neutralized the potentially negative effect they can have on our cells.

4. Strawberries can help minimize wrinkles. Vitamin C is a powerful tool we need to take more advantage of, as it is vital to the production of collagen, which helps to improve sink's elasticity and resilience. Since we lose collagen as we age, eating foods rich in vitamin C may result in healthier, younger-looking sin. But vitamin C isn't the only naturally- occurring wrinkle fighter found in strawberries. Researchers at hallym university in the republic of Korea concluded that elegiac acid visibly prevented collagen destruction and inflammatory response- two major factors in development of wrinkles- in human skin cells, after continued exposure to skin-damaging UV-B rays.

5. Strawberries fight bad cholesterol. According to the Heart and Stroke Foundation, hearth disease is one of the leading causes of death among Canadian women. Luckily, strawberries also contain powerful heart-health boosters.  “Ellagic acid and flavonoids— or phytochemicals—can provide an antioxidant effect that can benefit heart health in various ways,” explains Edwards. “One way includes counteracting the effect of low-density lipoprotein, or LDL—bad cholesterol in the blood—which causes plaque to build up in arteries. A second way is that they provide an anti-inflammatory effect, which is also good for the heart.” Researchers at the Clinical Nutrition and Risk Factor Modification Center in Toronto studied the effect of strawberries on a cholesterol-lowering diet and concluded that adding strawberries to the diet reduced oxidative damage, as well as blood lipids—both of which play a role in heart disease and diabetes.

6. Strawberries reduce inflammation. The antioxidants and phytochemicals found in strawberries
may also help to reduce inflammation of the joints, which may cause arthritis and can also lead to heart disease. A study conducted by the Harvard School of Public Health shows that women who eat 16 or more strawberries per week are 14 percent less likely to have elevated levels of C-reactive protein (CRP)—an indication of inflammation in the body.

7. Strawberries regulate blood pressure. Potassium is yet another heart healthy nutrient, and with 134 mg per serving, strawberries are considered a "medium source," according to Alberta Health Services. Potassium can help regulate blood pressure and may even help to lower high blood pressure by acting as a buffer against the negative effects of sodium. With their impact on the reduction of LDL, inflammation and high blood pressure, strawberries have earned the title of one of the most heart-healthy fruits you can eat.

8. Strawberries boost fibre. Fibre is a necessity for healthy digestion, and strawberries naturally contain about 2 g per serving. Problems that can arise from lack of fibre include constipation and diverticulitis—an inflammation of the intestines—which affects approximately 50 percent of people over 60. Fibre can also aid in fighting type 2 diabetes. “Fibre helps slow the absorption of sugars (i.e. glucose) in the blood,” says Edwards. "As a result, adults who are managing diabetes can enjoy strawberries—in moderation—in their diet."

9. Strawberries aid in weight management. Maintaining a healthy weight is one of the best defenses against type 2 diabetes and heart disease, not to mention just plain good for your overall well-being. “Strawberries are naturally low calorie (around 28 kCal per serving), fat-free and low in both sodium and sugar,” says Edwards. “Strawberries do contain natural sugars—though total sugars are fairly low with 4 grams per serving—and the total carbohydrate content is equivalent to less than a half slice of bread. Triple your serving to 1.5 cups and you'll have a snack that's less than 100 calories—and much healthier than those pre-packaged 100-calorie snacks!”

10. Strawberries promote pre-natal health. Folate is a B-vitamin recommended for women who are pregnant or trying to conceive, and strawberries are a good source with 21 mcg per serving. Folate is necessary in the early stages of pregnancy to help in the development of the baby’s brain, skull and spinal cord, and the folic acid in strawberries may help to prevent certain birth defects, such as spina bifida.

Smoothies! Everyone Loves Smoothies!


There is an endless amount of delicious types of smoothies that can be created and if your like me you never make the same one twice, if when trying! Here are some recent yummy smoothie I have come across. Enjoy!

Strawberry Banana Pineapple Smoothie (vegan, GF) - No Added Sugar


YIELD: about 20 ounces, serves 2
 
PREP TIME: 2 minutes
 
COOK TIME: 0 minutes
TOTAL TIME: 2 minutes

INGREDIENTS:

8 ounces strawberries (about 2 cups, I used whole, frozen berries)
2 medium ripe bananas, peeled (previously frozen into chunks is ideal)
about 1 cup pineapple juice, or as necessary (substitute with orange juice or your favorite juice medley)

DIRECTIONS:

  1. To the canister of a blender, add the strawberries, bananas, and about 1/2 cup juice. Add enough juice only as necessary to get blender moving and until desired smoothie consistency is reached.
  2. Blend on high power until smooth and creamy. The longer you blend, the fluffier the mixture tends to become due to the bananas.
  3. Pour mixture into 2 glasses and serve immediately. Extra portion will keep airtight in the freezer for up to 1 month (cover a freezer-safe glass with plasticwrap or place inside a ziplock to prevent freezer smells). Allow to come up to room temp for about 30 minutes before serving.

Berry Green Smoothie

Prep time: 5 mins
Total time: 5 mins
Make-ahead freezer friendly smoothies that are healthy, nutritious and so refreshing for your mornings!
Ingredients
  • 1 cup spinach leaves
  • 1/2 cup frozen blueberries
  • 1/2 cup frozen raspberries
  • 1 ripe banana
  • 1/2 cup milk
  • 2 tablespoons old fashioned oats
  • 1 tablespoon sugar, or more, to taste
Instructions
  • Combine spinach, blueberries, raspberries, banana, milk, oats, sugar and 1 cup ice in blender until smooth.
  • Serve immediately.

Blackberry Coconut Smoothie 

Ginger and toasted coconut give this breakfast smoothie a nice kick.
Ingredients
  • ½ cup frozen blackberries
  • ½ frozen banana
  • 1 teaspoon chia seeds
  • ¼ inch piece of fresh ginger
  • ½ cup almond or coconut milk
  • 2 tablespoons toasted coconut
Directions: Combine all the ingredients and enjoy!

Something Sweet for Your Sweet Heart


Strawberries have become a romantic an iconic treat for Valentines day, so if you want a treat for yourself or for your sweetie here are some delicious recipes to lend some inspiration.

Strawberry Shortcake with lemon cream sauce

For the strawberry filling:
1 quart strawberries, sliced
½ cup sugar

For the shortcakes:
⅓ cup shortening
2 cups all-purpose flour
2 tbsp. sugar
3 tsp. baking powder
1 tsp. salt
¾ cup milk
Additional sugar, for topping (if desired)

For the lemon cream:
½ cup lemon curd
½ cup heavy whipping cream

Mix strawberries and with the ½ cup of sugar. Let stand for at least an hour.

Preheat oven to 450°F. 

In a medium bowl, cut the shortening into the flour, 2 tbsp. sugar, baking powder and salt until the mixture looks like fine crumbs. Stir in milk just until blended.

Turn the dough out onto a lightly floured surface. Gently knead 20-25 times. Roll out into ½-in. thickness. Cut with a 3-in. floured biscuit cutter. Place shortcakes about 1-inch apart on an ungreased baking sheet. Sprinkle tops with additional sugar, if desired. Bake 10-12 minutes or until golden brown.

Place the lemon curd and heavy whipping cream in a medium bowl. Beat with an electric mixer on high speed until thickened, about 3-5 minutes.

Split shortcakes horizontally. Place shortcake bottoms on serving plates. Top with lemon cream sauce and strawberries. Replace tops. Serve immediately.



Strawberry Cannoli Parfaits with Pistachios
Ingredients
           1 pound of strawberries, hulled and sliced
  • 3 Satsuma Oranges, freshly squeezed
  • 1 cup heavy cream
  • ½ cup confectioners sugar
  • 1 cup ricotta
  • ? cup pistachios, chopped roughly
  • 1 package Amaretto D’Italia cookies (200g/7.05oz Matilde Vicenzi), crushed
Instructions
  • Cut up your strawberries. Slice oranges in half and squeeze the juice over the berries. If your oranges are large you could cut this down to 2.
  • Place the berries in a glass container and stick in the fridge for about 2 to 4 hours. Give it a shake every hour if you can.
  • Now in a mixer combine your heavy cream and confectioners sugar. Whip until peaks form.
  • Place your ricotta in a large bowl. Stir in ½ the whipped cream and mix a bit. Then add other ½ and fold it in.
  • Place a layer of crushed cookies in the bottom of your glasses.
  • Add a layer of strawberries.
  • Add a light layer of pistachios.
  • Add a layer of cannoli cream.
  • Repeat steps for a second layer.
  • Top with chopped pistachios.
  • Add a strawberry garnish on top.
  • Refrigerate for about an hour or more.
  • Serve with a big old strawberry, cannoli-y, pistachio smile

STRAWBERRY LEMON CHEESECAKE PARFAITS

PREP TIME: 10 
Buy these simple ingredients, mix together in a large bowl, fill parfait glasses, refrigerate, and serve! You can buy a pre-made angel food cake, too!

INGREDIENTS:

2 cups heavy whipping cream
1/2 cup powdered sugar
1 tsp. vanilla
8 oz. container mascarpone cheese
1/2 cup lemon curd
1 lb. or more of strawberries
1 whole angel food cake

DIRECTIONS:

Whip the heavy cream on high, adding in the powdered sugar and vanilla. Add the mascarpone cheese and lightly mix.
Fold in the lemon curd.
Cut the angel food cake into pieces.
Slice the strawberries (I use an egg slicer.)
Mix all ingredients together in a large bowl. Top with more berries.
Serve cold.

End of U-Pick Blueberry Season

The season is finally coming to a close for our U-Pick Blueberries. This coming Saturday (August 25, 2012) will be the last day we are open with our farm stand. We will be switching to our Fall/Winter hours of Monday through Friday 10am to 4pm and by appointment. We still have fresh blackberries, and will have frozen blueberries, blackberries, strawberries and raspberries.
